Below you will see some of the work done in the shop with brief descriptions. Some of these photos are raw butchered livestock. Please if you prefer not to see it don't look at it.

Custom Beef
This is one of the first custom beef ran through the butcher shop. This beef came to the shop weighing a whopping 1387 lbs and dressed out at 862 lbs.
The Meat Locker
Here you will see the meat locker. This has the beef broke down into 4 quarters to start the processing of the meat cuts.


Smoking Hams
Here Jacob is smoking hams. Each ham is different, but it approximately takes 12 hours to smoke a ham. He does special holiday orders for hams.
Bacon
Here is bacon that is getting ready to go into packaging to get vacuum sealed. Jacob has 2 different bacon recipes for his bacon.


Beef or Venison Sticks
Here are some beef or venison sticks hanging in the meat locker after they finished smoking in the wood fired smokehouse. These sticks can be cured with sodium nitrate or naturally with celery juice powder.
Beef or Venison Jerky
Here we have some of our Beef or Venison Jerky. After being marinated for some time the meat will be placed in the commercial dehydrator.


Sausage
Jacob makes fresh and smoked sausage. Each style has its own unique taste but always hits the spot. Breakfast or Supper it makes for a great meal.
